On the palate, it is elegant with hints of medicinal herbs, mint, basil, and sage, balanced by pleasant bitterness and spice. It pairs well with legumes, chickpea salads, seafood, baked potatoes, vegetable dishes, roasted poultry or lamb, and goat’s cheese.
